National Farmers' Market Week:
Chef's Summer Salad Recipe
Thank you to Riverwalk Market Fair Board member, Joe Riley, of Joe Mama's BBQ Sauce and Seasons for hosting a cooking demonstration at the market on Saturday, August 8 for National Farmers' Market Week!
If you were lucky enough to get a sample, you may still be thinking about that fresh summer salad. Luckily, he shared the recipe with us:
Summer Salad
Makes 1.5gl
Ingredients:
3 large bundles of kale, stem and center rib removed
1 bundle of swiss chard, stem removed
1 red sweet anaheim pepper, diced small
1/2 cup green onions, stems only, sliced thin
3/4 cup loosely packed fresh mint leaves, chopped
1/4 cup loosely packed fresh basil leaves
6 fresh squash blossoms, sliced thin and loosely chopped
Dressing:
2 cloves fresh garlic, minced
4 oz. Buckwheat Honey (Fieldstone Apiary)
4 oz. Ginger Infused Maple Syrup (Under the Bark Syrup Co.)
14 oz. Bootleg Cocktail Mix (Summer Lakes Beverage)
3 tbsp Raspberry Ghost Pepper Sauce (The Pepper People)
Preparation:
Reserve the squash blossoms and add to the greens when tossing with the dressing. After chopping the salad ingredients, toss together in a large bowl. Whisk together the dressing ingredients or use an immersion blender. Combine all ingredients, adding the squash blossoms, and toss before serving. If salad sits for a period the dressing will settle to the bottom. Toss again before serving to coat the greens.

Farm to Families Fundraiser
Thank you so much to everyone that joined us for the Farm to Families fundraiser on July 28 at Imminent Brewing.
We were ecstatic to share the news of the $20,000 matching donation gifted to us from the Peace, Love, and Llamas Foundation. Now, we need your help to reach this goal by October 31, 2026.

Celebrating FiftyNorth: Senior Saturday
Our Senior Saturday celebration held on June 20th was fabulous! We joined our friends at FiftyNorth in celebration of their landmark 50th anniversary.
The celebration is made even brighter thanks to the generous support of the Northfield Rotary Club, who awarded Riverwalk Market Fair a $500 grant. We put this gift directly into the hands of our community by distributing $5 tokens to seniors. These tokens were used to purchase fresh, locally-grown produce from our market vendors.

Eggplant Casserole (or Ratatouille Provencale)
8 servings
This ends up looking in color like a Braque still life.
Put in a deep skillet or heavy casserole:
1/3 cup olive oil
Saute until golden:
3/4 cup thinly sliced olives
2 cloves garlic
Remove the onions and garlic from the casserole and combine in layers with:
4 julienned green peppers
2 1/2 cups peeled, diced eggplant
3 cups zucchini in 1/2 inch slices
2 cups peeled, seeded, quartered tomatoes
Add to each layer:
Salt and pepper
Sprinkle the top with olive oil
Simmer, covered over very low heat 35 to 45 minutes. Uncover and continue to heat 10 minutes longer to reduce the amount of liquid. Serve hot or cold.
